I solved it.
I performed a factory reset, and re-added the printer to my account as a replacement.
After that I was able to edit the address with no issues.
I hope this can be helpful if anyone experiences the same error.
I noticed this process basically changes the default address assigned to the printer. Most likely there was something broken with the previous one.
