On some systems the RAID selection is the same as AHCI as it enables the same functions.  I suspect your laptop does not have any of those options in bios.

Your are having problems with SATA SSD not being found in bios. There is a video here of disassembly of 840 G3 that shows an SATA M.2  and no HDD.

There are about 40 variations (different part #) of the 840 G3 as shown by clicking the system board photo here

What is the exact Product ID of your laptop including the characters after the # symbol?

You mentioned SATA SSD is that an M.2 chip? l if so, did you pull out the existing one and replace it with a larger one?

Was it the 2.5 size HDD that you upgrade to SSD?

Depending on the motherboard design the m.2 can be SATA or NVME.   Motherboards designed for SATA NGFF (M.2) cannot use an NVME such as Samsung 970 or WD blue, etc.

If you removed an SATA type m.2 it has two slots in it unlike the NVME SSD

If you removed an NVME SSD and put it an SATA SSD it will fit but might not be recognized.  This has happened to me.

Do you have both HDD and m.2 SSD?

Can you boot windows?
