I want to upgrade my laptop with SSD but the recommendations until now are M.2 SATA SDD which seems expensive and hard to find in Turkey market. Instead of M.2 SATA SDD, can I use 2.5inch SATA SSD and could you suggest brand and model

The specs of your machine is
https://support.hp.com/au-en/document/c05665678
It already has 1 TB 5400 rpm SATA which is 2.5" HDD. You can NOT add more 2.5" SSD drive and you have to replace it with 1TB or 2TB 2.5" SSD such as https://www.samsung.com/au/memory-storage/sata-ssd/870-evo-1tb-sata-3-2-5-ssd-mz-77e1t0bw/

You can't add a 500 GB 2.5" drive, but you can replace the 2.5" mechanical hard drive that is currently installed with a 2.5" SSD.
I recommend the WD Blue SA510 2.5" SSD:
Below is the link to the service manual:

Yes, you can use lower capacity. I know for sure one day you need more storage
I don't know how hard your pocket now.

in the document you share there is a note in memory section "Two non-customer-accessible/upgradable memory module slots (Intel Core processors)"
What does that mean?
can't I add extra 8GB ram to laptop at home?

The 'Two non-customer-accessible/upgradable memory module slots (Intel Core processors' means that HP wants the memory upgrades to be performed by an authorized service center.
The memory can be removed and replaced and the procedure to do that can be found in chapter 6 of the service manual link I posted.
You can add an 8 GB DDR4-2400 CL17 memory chip in the empty slot.
