I have a hp 15-cs0022cl and I was wondering whether to use a 2 connector NVME M.2 ssd or a 3 connector one SATA M.2. It is not clear in the service manual

Hi,
Both SSDs will fit in the slot and your notebook offers support for both.
So, you can either install an M2 SATA3 such as the M2 Samsung 860 Evo or much faster M2 PCIe NVMe SSD such as the M2 Samsung 970 Evo Plus or similar. You can get of your desired capacity, there is no limit.
On page 54 of service manual you can see the steps to install the drive

Machine supports M.2 (if available slot) SATA SSD's .
