I was wondering how I can install previously skipped software updates? I can see the updates that I have skipped in the activity log but, the tick boxes to select the items are unavailable.
I had skipped these updates accidentally when using my laptop for the first time but, I now want to install them.
Any help would be much appreciated.

With Win10, MS changed drammatically the way Windows Update works, especially with regard to the options provided to users of the OS. No more could we pick and choose Updates, hiding the ones we did not want (as in the past), and then, unhiding them, later.
What would probably work in your case is simply resetting Windows Update, rebooting the PC, and then manually Checking for Updates. Here's a link from the Community Win10 Forums on how to reset Windows Update:
