I would like to find out how many external displays I can connect to the Spectre x360 13-aw2xxx, the maximum total resolution supported and what is the best way to connect the displays.

Yes,It can support up to 3 displays,
As per the specifications, your notebook supports a 2 Thunderbolt™ 4 with USB4™ Type-C® 40Gbps signaling rate (USB Power Delivery, DisplayPort™ 1.4, HP Sleep and Charge
You can connect USB C to USB C or you have to buy HP Spectre USB-C Dock 2.0
