I am trying to hook up two additional display screens to my laptop. Does this laptop support that? It only has 1 usb-c port, and audio port, and a usb-3 port

Nearly all HP Spectre X360 Convertible 13-Ap0xxx series as per processer Intel® Core™ i7  support multiple displays.

which shows it has

 

External ports

 

1 headphone/microphone combo;

2 Thunderbolt™ 3 (Data transfer up to 40 Gb/s signaling rate, Power Delivery, DP1.2, HP Sleep and Charge);

3 USB 3.1 Gen 2 (HP Sleep and Charge);

4 USB 3.1 Type-C™ Gen 2

 

As you can see, its USB-C port does support video out.  If you wish to have 2 or more external monitors, please enter your requirement on the following link and it will find for you few options on the market today including some HP products:
