Would I be able to switch out the WLAN cards from WIFI 5 to WIFI 6? Or is it bios locked?

Unfortunately, no one here would be able to tell you if your notebook has a BIOS whitelist or not.
Most HP notebooks made in 2014 or later do not, but there are exceptions.
The only way we find out if other Wi-Fi cards not listed in the notebook's service manual are supported, is when someone performs such an upgrade and reports the results.
I can only find one related discussion where someone wanted to upgrade the Wi-Fi adapter in a zBook, and you can read the answer I gave him.

You can also find the AX200 on eBay by searching by the HP part number.
