First confirm the printer driver that is installed. On your computer, go to control panel, then right click on the icon for devices and printers and select open from the drop down menu. Then right click on the icon for your printer and select printer properties from the drop down menu. Click on the advanced tab and make sure that it shows the installed driver is an HP driver and not a Microsoft IPP driver. IPP drivers only support basic functions and often refuse to print color. Download the recommended driver from support.hp.com and reinstall.
If you have an HP driver installed, then the likely cause is the driver failed to detect the color capability of the printer.
