If I don't sign up for instant ink after my trial period, can I sign up for it later?

Thank you for posting your query, I will be glad to help you. 

Yes you can sign up later, however, you will have to remove the instant ink cartridges and replace them with standard HP cartridges for your printer. 

 

To check your trial months on your Instant Ink account page.

  • Sign into your Instant Ink account
  • Click HP Instant Ink, then Overview in the left navigation menu.
  • Make sure the printer you are interested in is selected.
  • Your trial months remaining are under Plan Details. Your pages remaining during the month are in the Monthly Summary area.
