HP Officejet Pro 8610
macOS 11.0 Big Sur

I have an HP Officejet Pro 8610.  I originally tried to print when my colour cartridges had run out of ink but i couldn't get the printer to get over the fact that it had empty cartridges and just print in black ink (which was still half full).    Then I replaced the empty HP cartridges with some compatible 950 951 ones from Rymans.   Now it won't let me print (again despite the document I'm printing having no colour other than black typeface on it) this time because it says the non HP cartridges are duff.   I've replaced the Rymans ones with Jettec compatible ones and still it says they have errors.   They can't all have errors.   I have done all the diagnostic stuff HP recommend (popping the offending cartridges out and in; turning the power off for over a minute then restarting; wiping the contact on the cartridge carefully with lint free cloth).   Nothing has worked.  Is there a way to get the printer to ignore the colour inks and just print in black and white??   I feel about ready to take this printer which cost a fortune to the tip.
