The drop down menu to choose Booklet does not appear anywhere.

Hello, you may have to enable the booklet feature on your print driver. To do this go to control panel > devices and printers > right click on print driver > printer properties > device settings > Change "Booklet Maker Unit" to Installed > apply settings.
