I CAN'T FIND THE OPTION IN SETUP TO INSTALL THIS PRINTER WITH A USB ONLY CONNECTION--THE ONLY CHOICES ARE AIRPRINT, GENERIC, GENERAL PCL AND OTHER SOFTWARE--AND THE 'OTHER SOFTWARE' DOESN'T SEEM TO BE THE HP EASYSMART DRIVER. THEREFORE, I ATTEMPTED TO INSTALL IT THIS WAY WITH THE DOWNLOADED EASYSMART S/W.
I DOWNLOADED THE MOST RECENT DRIVER FOR THIS PRINTER FOR Mac OS 10.15: V. 2.9.3.01 JUN 1. I HAVE THE USB PRINTER CABLE CONNECTED VIA A USB HUB (THE MAC ONLY HAS USB/C PORTS SO THE HUB IS NEEDED WITH THE CABLE). THE SOFTWARE CAN'T FIND THE PRINTER WITH EITHER THE BONJOUR OPTION OR THE STANDARD INSTALL OPTION, AND IT ALSO REQUIRED THAT THE WIRELESS CONNECTION BE AVAILABLE ALTHOUGH THE USB CABLE IS CONNECTED.
HAS ANYONE BEEN ABLE TO CONFIGURE THIS PRINTER AS A USB ONLY CONNECTION?

Welcome to the HP Support Community. I'd be happy to assist you with the connectivity issue.
To better assist you - Is there an antivirus software installed on your Mac? If yes, please try disabling it and check if it works.
While you respond to that, go to System Information to check the if the USB is detected or not -
a.) From the Apple menu, choose About This Mac.
b.) Click System Report.
c.) Under the Hardware heading on the left side of the System Information window, click USB. USB 3 devices appear under USB 3.0 Bus, and USB 2 devices appear under USB 2.0 Bus. The printer should be under the USB 2.0 Bus.
If the device is not detected, it may not be receiving enough power or it may be blocked by internet security software. You may also try other ports on the hub or a different cable.
Hope this helps! Keep me posted.

It seems the printer driver doesn't support cabled connections on 64bit systems like Catalina (only wireless). I found this response when paying for HP support on this issue the other day. Unless there's a third-party developer programming to maintain USB drivers for older printers like this one, it seems that wireless connections will be the only option for connecting them. Unfortunate for the EMF sensitive.
This is a copy of what I received from tech support:
Good Day!
HP Photosmart 7520 All-in-One Printer was released September 9th of 2012, way back then all printers were created using 32-bit architechture only. Unfortunately when Mac OS Catalina was released last year of October 7th this Operating System was created using 64-bit architechture to give Mac Computers a better performance. Unfortunately all of the 32 bit printers that doesn't support driverless technology implemented on the MAC OS Catalina, may or may not work even without a driver by using Apple's own Airprint Technology but some of the 32-bit printers will no longer be working compatible on the MAC OS Catalina because of the some hardware & software complications with the computer system considering the age of the printer.
You can try to add the printer using Airprint as a driver but this will only allows you to use the printing capability and not the scanning since scanning requires a driver that needs to be installed on the MAC Computer.
Here's how to add printer using Airprint:
1. Go to Printer & Scanners
2. Press the (+) icon on the bottom
3. Select Add Printers & Scanners, a new window will show up
4. Click on your printer on the list
5. On the same window at the bottom you will see there
Name, Location & Use. Make sure to select Airprint under USE option
and then hit ADD
