I don't know how to keep my regular phone calls from being picked up by the fax after 2 rings, which does not allow people to leave me a voicemail. Also, I don't know how to set up my HP Office Jet Pro 8028 to answer a fax when I am not in my office.

2. Also, I don't know how to set up my HP Office Jet Pro 8028 to answer a fax when I am not in my office.
1. Change the number of rings used by the Fax to more than the number of rings used by the Answering machine.
2. Set the Fax pickup to Automatic.
Fax is one of the most well documented features on the printer.
There is a full chapter in the User Guide
Chapter 4 - Fax - Starting on Page 54
For example,
Set the Answer mode - Page 68
Change the number of rings -- Page 69
There is additional Fax help in Category Troubleshooting > Select Topic Fax, and in Category How-to > Select Topic Fax
