...after installing the new software update the scanner is not working anymore.
...result of HP print and scan doctor: driverfailure
...suggested solution of HP print and scan doctor: deinstall and install software
...result after new installation and reboot: driverfailure
...after several tries always same result, scanner is not working.
...all other functions are working well.

Are you able to copy well?
Let's try to do a root uninstall and reinstall of the software:
Unplug any USB cable, if any, before doing this.
1.) In Windows, search for and open Programs and features
2.) Select your HP Printer
3.) Select Uninstall
4.) In Windows, search for and open Devices and printers
5.) In the Devices and Printers windows look for your HP printer. If you see it listed right-click on it and choose 'Delete' or 'Remove Device'
6.) Open up the run command with the "Windows key + R" key combo.
7.) Type printui.exe /s and click Ok. (Note: there is a space in between “printui.exe” and “/s”)
8.) Click on the "Drivers" tab
9.) Look for HP Printer driver. If you see it Click on it and click Remove at the bottom
10.) Select Ok
11.) Select Apply and Ok on the Print Server Properties windows
12.) Close Devices and Printers
13.) Open up the run command with the "Windows key + R" key combo
14.) Type c:/programdata and click Ok. Go to Hewlett Packard folder, remove any printer related folders & files.
15.) Restart the computer.

sorry for delay.
I found exact your procedure in the community dated 28.01.2020 before I posted my problem here in the HP community.
But this solution doesn't solve my problem "scan does not work".
Yes the copy works well only scan is not possible.
In the meantime I bought a new AIO printer and I decommisioned the officejet 6700. I need a well working AIO printer.
It is realy a pity because the officejet 6700 was up to this unfortunately update very reliable with proper results. Despite the old age of 8 years.
I'm very disappointed about this software update which damaged my officejet 6700.
Because of "green sustainability " which applies HP, it is a bad example to shut down a good operating AIO printer with software updates and produce consequently in such case electronic waste.
