Product: Envy 7858 printer
Operating System: Microsoft Windows 10 (32-bit)

HP Envy printer 7858, Windows 10, need to turn sleep mode back off.

You can't you can only set it to a longer time ( I think 8 hours is max). The printer goes first to sleep and then to Auto OFF if not used for 8 hours.
