Scan to Email > Starting on Page 16
Editing -- or adding -- a new Profile to the Scan to Email profile is similar to having added the original Profile to your EWS - Scan to Email setup.
You might have switched to an email provider that requires the use of 2-Step Verification and an App Password.
This is not generally difficult to set up but is a bit different from having "Less Secure" access to apps that use your email.
Run through the process as needed for your email address - Add a new Profile.
After the new profile works, you can delete the old Profile.
Start here:
Open your Browser > Type / enter the Printer IP address into URL / Address bar
Tab Scan > Scan to Email > Settings / Scan to Email Setup

Email Account Security
"Scan to Email", “Scan to Network”, "HP Scan > Email" and "Share" are subject to your Email Account provider's security that governs how your email account interacts with "third party software / apps".
For example, Google (G-Mail) and other email providers, including (and not limited to) Apple, Microsoft, and Yahoo, might require that you enable 2-Step Verification AND create and use an App Password to interact with the printer software, printer applications, or any program that requires that software to access your email account.
Where the email provider's security requires it, the App Password is used in place of your normal email / account password in "third party" apps and software.

Steps
Log into your Google Account
Open your Google Security Webpage
Next, if not done, Switch ON 2-step verification
Next, Complete the steps to open your mail security settings
and
Create / Select app and (then) create your app password
- At the bottom, choose Select app and choose the app you using > Select device and choose the device you’re using > Generate.
- Follow the instructions to enter the App Password. The App Password is the 16-character code in the yellow bar on your device.
- Tap Done.
Tip: Most of the time, you’ll only have to enter an App Password once per app or device, so don’t worry about memorizing it.
Assign / set that new App Password in your Scan to Email profile as the password.

I went through the process of putting the printer IP address in my browser, and found the menu option to set up the scan to email. Unfortunately, this took me to a web page that would not open.
If I reset the printer (Pro 8600) to factory defaults, will this remove the "from" email for my "scan to email" option? Will I have to reset anything else, other than the wifi network?

No idea - doubtful?
The Profile / SMTP instructions might well be valid for setting up Scan to Email on your older printer.
That said, and not really knowing why you could not use your printer's IP address to open EWS, I cannot know whether any of the setup will work for you.
One thing to check -
If your browser cannot open the printer's own IP address due to that browser's security, use a different browser.
What?
Browsers do not understand internal network addresses - some browsers handle this by refusing to connect at all and without even giving you the opportunity to bypass the browser's objections and open the local page.
Try asking your question in a new post -- someone familiar with your model might be able to provide a better answer.
