What you need to do is set up your printer on AirPrint, which doesn't use a driver. Go to this website and follow the instructions. Helpful hint: On my computer system preferences, I could only set up AirPrint by deleting the printer and selecting add a printer (don't click on your printer, which is right there, but select add a printer and choose from the list. THEN you will see an option for setting up AirPrint). You do have to have WiFi for this option.

My printer is HP Officejet 4620 and I had the same issue while uninstalling and reinstalling of HP Easy Start driver didn't resolve the issue. Indeed, the uninstalling screen always stuck at the start, so I'm not sure if it's fully working at all.
The solution finally worked for me, was to manually add printer from Apple's printers & scanners setup. Because my printer supports Apple Airprint, it was discovered automatically. Then you'll have to make sure the selection of Airprint as the driver, instead of HP's driver. It worked at least for printing.
I haven't tried the scanner yet, but at least the printing is working now.
