Is Tray 2 CN548-80006 compatible with OfficeJet Pro 8610?  If not, what is the compatible product?

No, the above tray is compatible with the Officejet Pro 8600 printer, not with the 8610 printer.

 

You may get an additional tray or the 8610 printer, its part number is A8Z70A:

No, the 8710 printer does not support a 2nd tray, only the 8720 and 8730 printers supports a 2nd tray for the 8700 series.
