When I have a screen shot that I want to print, the HP Envy 7640 automatically wants to print from the photo tray. I want to bypass the photo tray or just remove it. If there is a way to do either, I would appreciate the info.

Welcome to the HP English Community --
Not sure which application you are using to print -- it does appear that AirPrint lacks a tray selection setting.
If not done, save that screenshot to your Photos folder.
Perhaps use HP Smart --
Open the HP Smart app
Select and Open the image file (Screenshot) to be printed
Click Next
Select the Tray and other settings
Continue with Next
Drag the gray arrow "UP" > Select options > Done
When ready, select Print
