Can HP Envy Pro scan double sided and where do documents go when scanning using HP smart app?!!!

No,

The printer supports automatic two-sided printing only, not two-sided scanning.

 

You may follow HP Easy Start and install the HP Basic or HP Full Feature Software option, then use HP Scan.

 

Change the Page Sides option to scan both sides manually, you will be prompt to reload the other side and complete the scan, then HP Scan rearranges the files automatically:
