Microsoft Windows 10 (64-bit)

I have a HP Scanjet 200, that is connected to my PC via USB cable.

I use this to scan direct to email for several hundred invoices per month.

The problem I have now is that the address book is several hundred contacts long and growing, and they are all out of order. It only shows the addresses in the order they were originally entered.

Is there any way to sort the address book into alphabetical order? I have seen answers that suggest finding the IP address, and going to EWS, but of course as this is connected via USB I have no IP address.

Furthermore, does anybody know where the address book is held?, I assume it must be somewhere on the hard drive, maybe in the HP software folder?

To clarify, I am referring to the email addresses, sorry for stating the obvious.
