Using HP Pavillion 550-126 and HP Officejet 8600 printer. When I click on HP Scan & Capture icon, the scan screen opens and the scan process starts up right away and does not give time to adjust settings and hit the SCAN button.

Thanks for using the HP Forums. Apologies for jumping in.
Can you try this :
Instead of doing a "Left Click" on e.g. Capture Photos, which will start scan immediately, can you do a "Right Click" instead?
The Settings menu will pop up from the bottom and you can adjust your settings before scanning.

If the application is hosed (non-functional, broken, pile of rubble), you can quickly uninstall it > get a new copy for the Windows Store > install the application.
Start > All Apps > scroll down to "HP" apps > Right-Click on HP Scan and Capture > Uninstall
Restart your computer and log in
Download / Install a fresh copy of the application
If you don't wish to replace the application with a new copy of the program, you can try opening the copy of the program you have installed >
Wait for errant scan to complete ... When you are able to so do...
Right-Click on the screen >
Click on the Settings wheel (lower right corner) >>
Recheck / Adjust the settings
When you see a Post that helps you,

Click the "Thumbs Up" on that Post.

Thanks for the reasponse. Uninstalled and re-installed scan download. Still does the same thing - went into settings but do not see anything that can be changed. What I did do is when I opened the program and clicked on the Capture Document and it stated scanning right away, I hit the cancel button - this stopped the scan and let me do my settings adjustments and the I could hit the Scan button to control it myself. Should not have to do it thius way - I think HP has an issue with this product. Thanks again.

My apologies, I did not understand that you had clicked "Capture Photos / Capture Documents".
Click>Scan does give you an immediate view of the document / photo you placed on the glass -- if this is not what you want, then yes -- you must wait a few seconds for the scan to complete, remove it after it shows on the screen, or click cancel. Adjust the settings > click the "+" to scan (again).
The product is apparently working as written - I agree the Click>Scan response is not optimal for everyone; it is easy enough to avoid the issue:
@greenturtle provided the method you want to use to pre-set your settings for the scan job:
When you first open the program, and before you click Capture Photos / Capture Documents, click somewhere near the lower-right corner, the settings wheel will appear so you can select / change the options for the pending job.
