I just bought an HP Color LaserJet 283MFP and the scan to email worked fine, then, all of a sudden all I can get is failed scan?

If you have not made any changes, this could be an issue with the HP servers. Kindly wait and retry after a couple of hours.
If the issue persists, check the settings:
