is it possible to scan multiple pages into one document with an Officejet 6700?

Yes.

HP Scan - part of the full driver printer software, can do this.

Example - HP Scan - Menu - More > Destination > File Type

UNCHECK / clear box "Separate file for each scanned page"

HP Officejet 6700 Premium e-All-in-One Printer series - H711 Full Feature Software and Driver Recomm... 

When asked, opt for the Full Driver to be installed.

After the software is installed, Restart the computer and sign in.

The installation of the full driver generally adds at least one, possibly two shortcuts to the Desktop.

 Note:  Printer Assistant, HP Scan Assistant, and HP Scan are dependent on printer model and supported software options.
