In a previous HP printer/scanner I was able to feed multiple pages through the document feeder and it would save each page as a separate pdf file. I do no currently see that setting so now I get one single file for everything that goes through the document feeder.

Please try this scan solution:
HP Scan Extended
For Windows: ftp://ftp.hp.com/pub/scanners/HPScanExt/HPScanExt.msi
Once it's downloaded and installed, go to Start > All Programs > HP > HP Scan Extended > Run "HP Scan Extended"

This does not resolve my issue. I still get one single pdf file when scanning multiple pages. I am looking for a single pdf file for each page scanned. The old HP Solution Center used to have an option to split the files out and I do not see that option in HP Scan Extended.

Did you check all the checkboxes for your file?????
Just go to the correct section and make sure the Separate file for each scanned page is checked.
