Elitebook 840 G5 Three Monitor Configuration

I had previously been enjoying three monitors using an HP Ultraslim Docking Station with my 840 G1 / Windows 10 without issues.  But when my 840 G1 started to fail, I figured I should upgrade, and so I chose an 840 G5 / Windows 11 so I could keep using my Ultraslim Dock.  However, my G5 wouldn't charge on the Ultraslim dock, nor would it detect any monitors. 

So, that's when HP Forum Expert @Banhien recommended that I use a USB-C docking station instead with the G5.  And I was so grateful for his help!!

I bought a USB-C dock and I am now charging my laptop and using my lovely HD monitors, well some of them anyway...

I can't get the Windows+P and / or System>Display settings / configuration quite right, so I can use all three monitors at the same time, like I could with my G1.... and I was hoping someone here could assist. 

The G5 can support 3 monitors, but there are technically FOUR monitors, if  the laptop screen is counted?  But I don't want to use my laptop screen; I want to tuck the laptop in my drawer and simply run the three monitors externally.  

So, after trying for hours, I ended up with the below two configurations... neither of which is what I want:

(green = wanted, red = not wanted)

2 monitors 1 laptop screen (on desk)	all with 1920x1080 resolution
1 monitor	no connection

OR

2 monitors	1920x1080 resolution
1 monitor	680x420 and there's nothing I can do to change its mind.
1 laptop (in drawer)	projecting / blank

WHAT I WANT IS:

3 monitors	1920x1080 resolution
1 laptop screen (in drawer)	projecting / blank

And I can't figure out why the final monitor (regardless of which monitor is connected last) always switches to 680x420 resolution and can not be changed.  

I AM using different cable types, but switching the cables around between monitors and dock ports doesn't make a difference.... the last external monitor connected goes low res.... yet my laptop monitor can be at full resolution in conjunction with two full-res monitors.  This doesn't make any sense.

Is anyone able to assist me with settings / configurations to accomplish 1920x1080 resolution on all three external monitors? In this example below,

1: Laptop (blank screen) is set at "Disconnect this display" so that all three monitors display content

4: HD monitor - displaying 1980x1080

2: HD monitor - displaying 1980x1080

3: HD monitor - last to be added defaults to 680x420, and Display Resolution gets greyed out
