"I am looking to purchase an SSD for my HP Laptop - 15-db0023nt, but I have seen that there may be compatibility issues with some SSDs. Does my laptop have a maximum supported SSD capacity?"

Since your notebook has an AMD Ryzen processor, it has a M.2 slot that supports NVMe SSDs.
With NVMe SSD's theoretically the sky's the limit.
You should be able to install any capacity NVMe SSD you want.
HP only offered NVMe SSD's up to 256 GB in the model series according to chapter 1 of the service manual:
