Microsoft Windows 10 (64-bit)

I have an HP ENVY 5540 printer/scanner/copier. I am trying to scan a document so that it is editable. The only options the scanner gives are scan as PDF or scan as JPEG, neither of which allows editing. How can I scan the document so I can edit it  after scanning?
