Windows - Full Driver printer software likely supports a manual option in HP Scan .

Open HP Scan

Select to Save as PDF

In right hand main menu, Look for Page Sides > "2-sided (manual)"

The software will guide you to scan the first side, remove / replace the stack, and scan the second side.

HP Scan automatically reorders the pages.
