My question is: Is it ok to install an extra hard drive (in this case my old laptop drive) in one of the spare SATA ports on the motherboard? My first two are taken up by my first hard drive and the stock optical drive.

You can add the drive as a data drive. This tray will work. Data cable
The power supply should have an extra Sata power lead.
