Firstly, you may want to check whether your printer has installed the Printer Driver that is compatible with Mac OS 10.12 usage.  Here is the link:

HP Deskjet 3755 All-in-One Printer is in the list, you can download the Recommended Driver via 'HP Easy Start' or/and the Additional Driver Options via 'Apple Software Update' links or follow the instruction in the website.

 

After getting the compatible printer driver for your Printer and Mac, you should be able to set the printing in black only with Grayscale selection.  Steps can refer to here:

Per my understanding, for printing the default setting is colour.  Current printer behaviour is that can set Grayscale for each print job, but not able to set it as default.

After further search, able to find this site regarding to 'Print only black for all your print jobs' for Mac user.  Do take a look and let me know if it solves your issue / concern.
