Thank you for your query.
I grasp that you reformatted the hard drive and you no longer have a recovery partition but, you created recovery DVDs and would like to know how to utilize them to return to the default OS Windows 8.1. Here is a link to:

Please note the section on "Recovery from discs (Windows 8)" as you will need to boot to the discs you created. Here is a link to assist you with changing the boot order:
HP PCs - Configuring the Boot Order in the System BIOS
