I'm running 2X E5-2670 0 processors. According to the specs, I can upgrade to V2 (10 cores), but I'm wondering if it would handle V3 or V4 as well, particularly the E5-2690 V4.

You can upgrade to V2 if you have the 2013 bootblock date bios.
V3 and V4 run on the LGA 2011-3 socket which is incompatible with the LGA 2011 socket in the Z820.
