Hi all. I'm wondering if I can replace the mechanical HDD in my EliteBook 840 G1 with a Samsung 860 EVO V-NAND SSD? Thanks in advance for the help

Hi:
You should be able to replace the 2.5" mechanical hard drive with any brand 2.5" SATA SSD you want such as the Samsung 860.
You may also want to look into one of the Western Digital Blue 2.5" SSD's as they provide the best performance for the price, in my opinion.
An equivalent Samsung SSD to one of the WD Blue drives would be the Samsung 870 2.5" SSD.
