Hi Fisherwoman,
I'm sorry to hear you are having problems scanning with your new Officejet 8600 and your Mac.
To better assist you can you please provide further information:
1) What model of Officejet Pro 8600 do you have (Basic, Plus, or Premium)? If you know your model/product number that would provide the information.
2) How is the printer connected (USB cable, wireless, or ethernet)?
3) Are you still running Mac OS X 10.6.8 (as per thread title)? I'm asking because Mac OS X 10.9 Mavericks has been recently introduced and is available for download free of charge.
4) When you installed the printer driver and software did you install the full feature software?

I can defiantly help you resolve the scan to computer issue you are experiencing. Please follow the instructions in the link below to correct the issue.
Scan to computer option missing. < Click here.

Thanks but there was additional steps that needed to be completed to get the scan enabled.
I ended up calling HP Support. This is how they resolved the issue
1) Downloaded the latest print driver from the the HP Website. The softward disk did not have have the latest.
2) Went to apple site and downloaded the the latest HPPrintDriver 2.16.1
3) Change to a static IP address.
4) Installed the HP driver (from HP)
5) Installed the HPPrintDriver (from apple)
6) Then enabled scan function under "Scan to Computer" from the HP Utility window.
