Product: HP OfficeJet Pro 7740 Wide Format All-in-One Printer

My A4 documents print in colour, but not my A3 documents.   Is there some sort of economy setting?

Nope, you need to go to hp.com and install the latest print driver from hp. You are currently printing with Microsoft drivers and those are causing you issues on A3.
