Poly Support provided the following temporary fix:
Disable microphone for the Cortana app in the Cortana settings menu - no matter if you actually use Cortana.
Then you can continue to use Poly Sync 20 with other apps with full HD sound capabilities as expected.

The other phenomenon on Win 11 of the Microphone conflict besides the bad sound quality caused for the Poly Sync 20 speaker is, that you cannot play back anything from simultaneously paired BT devices (e.g. phone) on your Poly Sync 20 while your laptop is connected to it.
That problem also goes away when disabling the mic for Cortana.
