Product: OMEN by HP 27 inch QHD 165Hz Gaming Monitor - OMEN 27q
I have tried every way, every source I could find to get it up to 165Hz, the refresh rate that it was supposed to be. I wonder if I should use a DisplayPort to support 165Hz because I have seen somewhere that 165Hz might not be supported on HDMI port.

That depends on the HDMI version, the 2.1 version goes to 165 Hz at 2K resolution, in 4K it can only go to 144 Hz.
This is an example without knowing the characteristics of your PC it is not possible to know what it supports.
