I'd really love to connect my work laptop to my Omen 27i monitor[s]. I'm not sure if it's possible, and if it is, I don't know how to do that. There's a HDMI mini port on the right hand side along with two USB-type C THunderbolt ports on the laptop.

 

The Omen 27i lists the following: 

Signal input connectors: 1 DisplayPort™ 1.2 in (with HDCP support); 1 HDMI 2.0 (with HDCP support)

Ports: 3 USB 3.0 (2 downstream, 1 upstream)

 

I'm not sure what downstream and upstream mean. I just want to know how I can do this so I'll have an easier and a lot nicer looking set up.

You should be able to connect your monitor to one Thunderbolt (USB-C) port on your machine using a compatible USB-C to DP adapter. But you are wasting a very valuable port on your machine just for a monitor. Your machine should have

 

  •  (2) USB 3.2 Type-C ports with Thunderbolt support (40 Gbps signaling rate with SuperSpeed USB Type-C 10 Gbps signaling rate (USB Power Delivery, DisplayPort 1.2, HP Sleep and Charge)
  • (2) USB 3.2 Gen 1 Type-A ports (1 charging)
  • (1) HDMI 2.0 (cable sold separately)
  • (1) Headphone/microphone combo jack
  • (1) AC power input port
and your monitor has following ports (for video)
 
  • 1 x DisplayPort™ 1.2
  • 1 x HDMI 2.0
You can connect HDMI to HDMI and you will get same result.
 
Note: Your monitor also has3 x USB 3.0 (2 upstream and 1 downstream) ports. You can connect USB cable from your machine to your monitor (it has different shape)  that means downstream and you can have 2 more USB 3.0 ports to connect to external devices such as  USB drive, keyboard, mouse ...  (upstream).
