I am looking for a dock to use with an HP 250 G8.  Will the G2 dock 120W work, or has anyone had any issues?

Which G2 dock ? Please use the following document to find out which docks are compatible with your machine (check the list on the last few pages).

It lists this for the G2 USB-C/A:

  • HP 240/245/255 G7, G8

 

I do not see anything listing HP 250 G8 specifically.
