My HP Thunderbolt Dock G2 should be able to support my 4 HP monitors but it is not detecting the 4th monitor, even with an 8K USB-C to HDMI plugged into the TB port. How do I get the last monitor to connect?

That depends on the graphics card you have, for example intel graphics cards generally support only 3 external monitors plus the laptop screen.

If I plug 3 monitors into the docking station and 1 directly into my laptop, I am able to get all 4 to function correctly (while leaving my laptop closed, so 4 displays total). I would prefer to have all the monitors go through the docking station though for better cable management on my desk. Is there a way to only use the docking station for this?
