My Zbook book has a NVIDIA Quadro graphics card which runs for monitors connected to the HDMI port. If I purchase a HP Thunderbolt G2 dock which has 2x Display ports, will the monitors connected to this utilise the NVIDIA graphics card? i.e. not the onboard Intel graphics card.

the video output over a dock will be the NVidia graphics when connecting to the DP ports... If you want something different, you might look at the usb-c universal dock G2 where a DisplayLink driver (and chip on the dock) will support 2 external 4k displays or 3 FHD displays... something to consider, depending on your needs for video output
