 can I connect two 4k monitors to this HP EliteBook 840 G10 6T291EA pc?
I want to connect one screen via the HDMI 2.1 and another one via the ThunderBolt 4 port using an adapter

As banhien EXPERT Level 20 informed you in his reply, you can definitely have dual 4k monitors connected. According to the datasheet you linked to, 840 g10s have 2 Thunderbolt™4 ports that support DisplayPort™1.4 and 1 HDMI 2.1 port. Documentation on Thunderbolt4 informs us that "One Thunderbolt 4 port can connect up to two 4K 60hz DisplayPort or HDMI monitors through a compatible dock or an adapter. Thunderbolt designated monitors can be connected directly." Since the datasheet shows that you can have 3 external displays on this laptop with the use of a docking station, a triple monitor config will also be possible by using the TB and HDMI ports. Therefore, you can connect 3 external displays without a docking station. These docks are optional (for more efficient and tidy computing).
