Hello everyone,
I have just bought an Elitebook 840 G9 with an intel I5-1245u and 16g of ddr5 but the cards graphics is Intel uhd graphics instead of Iris Xe.
I know that Iris Xe needs dual channel ram but to my knowledge all ddr5 ram are dual channel. Is there any solution to this

You may be misunderstanding the meaning of dual channel.
Achieving dual channel means each soDIMM slot must be populated by an identical soDIMM memory module.
If you already have a pair of identical modules installed, you might simply need to install the Isis Xe driver software.
Here is the driver, direct from Intel.

Take a read of this.
Install a pair of compatible identical modules in your laptop's soDIMM slots so you can use the Iris xe graphics.
