Just got a new 840 G6 and the fan is running constantly and I have not even loaded any apps on the machine yet.  What is the normal default setting for the fan speed in BIOS for this model?  Wondering if I should change it.

there is no normal fan speed... fan speed is managed by the BIOS which determines if fan needs to run based on internal thermals... 2 things to check: make sure the BIOS is not set to run fan 100% when plugged in (i assume you are noticing the fans when running while on a/c, then make sure the bios and drivers, especially Intel, are up to date... use HP Image Assistant for this
