I was under the impression the ZBOOK 15 G6 would fit a 2.5 inch SSD? But when I opened up the backcover part of the motherboard is preventing anything of 2.5 inch size to fit.
Also there's no connector to be found?
How is this possible?

Hi
2 choices...
The 15 has a
Storage and drives
15 U
Storage and drives
So you could be correct, equally ..........
So with the SKU: it may be possible to differentiate.

I have the 15 G6 (not the 15u). This is what surprises me even harder.
I ordered the Intel Core i9-9880H with 1TB PCIe (NVMe) MLC Solid State Drive, which leaves me with another free NVMe slot (as I expected by reading the specifications).
But the bay to add a 2.5inch drive is being occupied by part of the motherboard. So that 'slot' is completely useless.
What am I overlooking here?

Hi

Description : HP ZBOOK 15 G6 BASE MODEL MOBILE WORKSTATION
And I don't have a clue.
All the evidence suggests you are correct, but that is no real help.
Sorry.

Just faced exactly the same unpleasant surprise when opening mine (Zbook 15 G6, 6TU91EA#ABB) to mount a brand new 2.5 inch 2TB SSD. Money well spent 😞 The irony is that the laptop did come with a separate 2.5 inch storage drive holder, which is supposed to fit into that bay. So, unless a model is explicitly fitted with a 2.5 inch HDD drive, how on earth can one figure out whether it has a functional SATA bay o not? No specs sheet seems clear about this issue.
