Is there an authoritative position from HP on the support of legacy HP EliteDesk 800 G2/G3?
I acknowledge they are outside hardware maintenance. My question relates to potential BIOS/firmware updates - would they a) be made available and b) is there a date when the commitment to BIOS/firmware updates finishes?

Welcome to our HP User Forum!
The HP EliteDesk 800 G2 was introduced in the Fall of 2015. I couldn't locate its end-of-life (EOL) or end-of-service/support-life (EOSL) dates (see: HPE ELITEDESK 800G2 DESKTOP EOL, EOSL Dates & Third Party Maintenance (northsmart.com)), but it likely ended sometime in 2018.
The HP EliteDesk 800 G3 was introduced in the Spring of 2017. Its EOL date was apparently May 31st, 2020 (see: Product datasheet HP EliteDesk 800 G3 Small Form Factor PC PCs/Workstations (1TY40PA) (icecat.biz)).
To the best of ability, I could not dig out an 'official' HP EOS statement. As a general rule of thumb though, once a PC has reached 5 years from the date of manufacturing you can consider that the PC has reached its EOL.
Hope this was helpful.
Kind Regards.
