HP approved cpu's can be found in the latest z840 quickspecs document and this document is posted in plain sight on the hp web site in the z840 section

The CPU that produces the highest Passmark CPU score (~ = to clock cycles per unit time) is the Xeon E5-2696 v4 22-core (CPU= 35698) and 2nd, the E5-2696 v3 18-core (= 34526). If the best single-thread performance using two processors is the objective, it's going to be to use the E5-2696 v3 as it's Turbo speed is 3.8 GHz. The E5-2643 v2 6-core is 3.7GHz so that would be in the top tier for single thread . The E5-2667 v3 and v4 are 8-core @ 3.6GHz.
