I own a ProDesk 600 G3 running Windows 10 with a Core i5 7500 CPU. Looking at the documentation it can support Core i7 CPUs (6400 or 7700) but not sure if its user upgradable,
Is it possible to just swap the Core i5 for a Core i7 or is it a more complex upgrade?

You can just swap your Intel i5 processor for an Intel i7-6700 or i7-7700 processor, and your HP ProDesk 600 G3 SFF/MT should accept it seamlessly!
By the way, you may want to check your BIOS version. [EDIT:] Type System Information in your Windows search bar, left-click on the System Information App, and you should see something this (to illustrate, this is one of my desktop's sys info):
If your version is less than "00.02.40 (Rev.A)" -see pic below, I would recommend upgrading your BIOS BEFORE swapping CPUs:
